Halibut Fish Tacos with Lime Cilantro Cream


2 Large Filets of fresh firm fleshed white fish (such as Halibut or Snapper)
2 Tablespoons butter
2 Tablespoons olive oil
1 Tablespoon ground cumin
Freshly ground salt and pepper
2-3 Cloves chopped fresh garlic
½ Cup caramelized onions (homemade or store bought- see my chefs note below for my pick )
3/4-Cup Sour Cream
2 Limes
1 Avocado, diced
½ Cup chopped Cilantro
¼ Cup very thinly sliced red bell pepper
1 Cup chopped Romaine Lettuce
Uncooked Tortillas
Hot Sauce

Halibut Fish Tacos:

Sprinkle cumin and freshly ground salt and pepper over fish filets, gently rub. Over medium heat in a large sauté pan, heat olive oil and butter until butter is melted and bubbling. Place fish in pan. Sauté over medium heat for 2 minutes on each side per inch of thickness. (If filet is 2 inches thick, sauté for roughly 4 minutes each side.)

When fish is almost done, add garlic to butter and oil in pan. (Next to fish, not on top of.) Gently sauté garlic until fragrant, about 1-2 minutes max. Take care not to over garlic; this will result in a bitter taste. Take pan off heat, cover and set aside.

Cook tortillas in non-stick pan over medium heat. Wrap in foil and place in warmed oven until ready to assemble.

Using two forks, gently flake fish in pan. Squeeze juice of one lime over fish and stir mixture with pan juices.

Lime Cilantro Cream:

Finely chop ¼ cup of the cilantro. In a bowl mix the cilantro, sour cream, and juice of one lime. Add salt and pepper to taste. If mixture is too tart, add more salt as needed. Consistency should be similar to salad dressing.

To assemble:

Place desired amount of fish in tortilla, top with caramelized onions, bell pepper, avocado, cilantro and romaine lettuce. Drizzle lime cilantro cream and hot sauce over each taco and enjoy!
